Lemon, Ginger & Mint Quencher

I've found the perfect summer thirst quencher! I love ginger & use it a lot in cooking, so I was intrigued when I found this recipe using fresh root ginger to make a cold summer drink. The recipe states 4-6 lemons, I used 5 & the result was a perfect balance between the tartness of the lemon, the sweetness of the sugar & the freshness of the ginger & mint.
I'll definitely be serving this as an acoholic alternative at summer BBQ's & outdoor soirees, it's so refreshing.

Yum, I love ginger too! My friends always make fun of me because I can eat it plain. This looks delicious! I have to say that nothing tastes as good to me as an ice cold glass of Perrier in this sweltering heat
