Christmas Cake

I haven't made a Christmas cake since my Home Economics course at school, so it was high time I gave one another shot! Not to put too much pressure on myself, I saw this nifty Christmas Cake Baking Kit by Sainsburys, which cleverly included pre-weighed out ingredients & a handy leaflet with step by step instructions...no mess, no mistakes, no waste!

The kit couldn't have been easier to use...
ingredients included in the kit
additional ingredients required

the tin needed double lining

creaming the butter & sugar...followed by the eggs

in goes the lemon zest & juice

luxury mixed fruit steeped in Armanac...I got high on the alcoholic fumes!!!!

folding the flour & mixed spice

pop in the oven for 3 & a half hours

et voila!
The cake was slightly more cooked around the edge than I would have liked, so I will simply shave off the edge of the cake before icing.

Next week I will show you how to ice a Christmas Cake, which will probably be one of my biggest culinary challenges to date, as I'm not the most creative person I know!!!

oh well done you! I have never made one, my boyfriend just made our very first home-made Christmas Pudding like you mentioned infused with plenty of alcohol! I cant wait to try it x

I like Christmas pudding not such a fan of Christmas cake. However the shot of the mix before you cooked it reminded me so much of being a little kid and eating the uncooked mix that my Gran was making. Xxxx

Yummers! It really isn't Christmas, unless you have this cake :) It's the same thing, but my mom has always called it fruit cake :)
