Eton Mess With Strawberries

by Adele

Fed up with Christmas Pudding & Mince Pies? Or simply need a delicious dessert to throw together in a flash. You don't really need a recipe to make this it's that easy, but I found this recipe for you to follow, just in case you fancy making your own meringue!

To make this super quick & easy, it's best to cheat like I did & buy good quality meringues.

all you need is meringue, strawberries, double cream, vanilla essence & caster sugar

whip together the cream, vanilla essence & half the sugar

the cream should be stiff like this

hull & slice the strawberries

blend half of the strawberries & sugar to a pulp

crumble the meringues into the cream

drizzle over the strawberry coulis

sprinkle over the other half of the strawberries & serve

I can guarantee you'll have your guests wanting more!!

Hope you all had a fabulous Christmas & Santa was good to you!
