Unbelievably Easy Mince Pies

by Adele

Those of you who follow me on Twitter will know that on Monday I made my first batch of Mince Pies this year. To me, Mince Pies personify Christmas & make me feel nostalgic. It was always tradition in our family to leave a glass of sherry & a mince pie out for Santa when he came to deliver the presents!!

I swear by this recipe which makes unbelievably tasty sweet pastry (think sweet Shortbread) with no need to roll out. These mince pies never fail to be a hit with family & friends. The other key to success is using the best quality Mincement, preferrably mature & having been soaked in lashings of alcohol!

If you have a food processor this makes extremely light work of rubbing the fat into the flour

Serve warm with a sprinkle of icing sugar & enjoy!

Oooh they look delicious. I'm so excited to get home to england and be able to eat mince pies again. After two years in Korea I really miss all the usual christmas food that I can't get here.

I will probably try baking these myself if I get time! Thanks for providing the recipe!
