Winter Minestrone With Pesto Croutes

Now that Christmas has passed, it's time to get back onto the straight & narrow! No more Christmas chocolate,  party nibbles & crisps. 
Eating healthy food & exercise is a big part of my normal day to day life, so now the festivities are over I'm starting 2012 as I mean to go on...healthy & happy! 

I love making soups & my challenge was to find a soup recipe that really is a healthy meal in a bowl. This recipe is exactly what I was looking for. Packed full of vegetables (a great way to get your 5 a day), you can leave out the bacon to make it even healthier or vegetarian.



chop your veg - don't be afraid to keep it rustic!


you can add mushrooms instead of bacon if you prefer, however the bacon gives a lovely flavour


gently cook the bacon & onion

add the veg & crushed garlic

pour in the stock, chopped tomatoes & add the sage. Simmer for approx 30 mins

add the haricot beans & chopped parsley

et voila!
and for the Pesto Croutons (optional, but soooo yummy!) 


cut your bread into squares

lightly coat in olive oil & pesto

bake in oven for approx 10 mins (200C)



I was really impressed with the flavours in the soup & the pesto croutons really are a tasty addition. I didn't serve with bread as in my opinion, this would be too much on top of the croutons.
So there you have it! My healthy start to 2012.

This was one of my favourite Christmas gifts...my intotheblonde.com apron, from Ian's brother & family. Now I'll feel like a real pro when I'm cooking!!
