Roasted Chicken Breast With Pancetta, Leeks & Thyme

Sunday Roast
Made this for our evening meal a couple of Sunday's ago. It has to be the easiest dish to make as you just bung everything into a bowl, wrap the chicken in the pancetta, arrange on the top of the leeks & whack it in the oven for 30 minutes!
It's also a quick alternative to cooking a whole roast bird.
So, for those of my followers who tell me they can't cook, give this recipe a try & impress your loved ones!!









served with roast potatoes, roast parsnips, balsamic & honey glazed red cabbage
