A perfect dish for Vegetarians, I like to make baked mushrooms either as a starter, lunch time snack or, using smaller mushrooms as nibbles to accompany drinks when friends come over.
Aside from being quick & easy to make, you can prepare them in advance, then just whack them in the oven when your guests arrive...et voila!
I found this recipe on line for you to follow if you're making for the 1st time, but I can guarantee, once you've tried them, you'll make again & again.
Mix together the ricotta, lemon zest, chilli, oregano & parmesan. Season.
Remove the stalks & wipe clean the mushrooms. I'm using chestnut mushrooms, but other varieties ie button, portobello are also suitable
Toss the mushrooms in olive oil & season. Spoon in the filling, sprinkle over parmesan cook at 220C for 15 mins
Cook at 220C for 15 mins
I've served on a bed of rocket with stuffed olives, sundried tomatoes & parmesan shavings
