As the seasons change & summer comes, my pudding tastes switch from winter comfort puddings to lighter summer options.
This recipe works well served hot or cold. If you don't have Amaretto in your cupboard, you can substitute any sweet liqueur - I like to use my Wild African Cream Liqueur that my friend Ruth brought me from South Africa, as the creaminess blends well with the meringue. I'm also using Nectarines in place of peaches as I prefer the non furry skin!
It's a quick & fuss free dessert to make (the hardest thing you have to do is whisk an egg white!!), with delicious results.

Mmm this looks delicious! I love peaches and nectarines, but for some reason I can only eat them when they're cooked - I bet this would be just as yummy with grilled peaches, too! :)

Interesting! So you call this 'pudding' in UK? See...pudding in the US is like a yogurt texture, and I suppose this is what we call 'crisp?' Essentially it is a crustless pie? It looks really good and the African Cream sounds really yummy...whether as an ingredient or alone hehehehe ;)
