While I was relaxing in Norfolk, I caught an episode of Lorraine Pascale's Home Cooking Made Easy on TV. As soon as I saw her make these Peppermint Creams, I knew I had to try making them!
Instead of using egg whites, the recipe contains condensed milk (a blast from the 70s!), which is mixed with icing sugar & peppermint extract to make a fondant - it's soooo simple...this is definitely one to try yourselves!
You can choose whether to coat them in dark chocolate - I opted for the half dipped effect.
OMG! They are soooo moorish. I'm just tucking into them with the Cappucino I made, whilst I write this post - not sure if they're going to last til Ian gets home from work!!
