Chocolate Fridge Cake With Pecan + Meringues

Wednesday, 29 August 2012

by Adele

Last weekend we had 3 days off for the Bank Holiday, so it was time to make something super yummy to offer friends & family who popped over.

I'm a huge fan of Fridge Cake & particularly love this recipe as it contains meringue, as well as the usual nuts & dried fruit. If, like me you prefer a rustic finish to the cake, don't chop your nuts or crumble your Digestive biscuits too small.

What I love about making this cake is that it's kind of baking without baking, if you get what I mean! You just need to allow time for the cake to set in the fridge.

naughty but nice...

This looks so delicious Adele, it's awesome that you don't even need to bake it really and it seems like something if I put my mind to I could maybe make, it's definitely tempting haha!
