Last weekend we had 3 days off for the Bank Holiday, so it was time to make something super yummy to offer friends & family who popped over.
I'm a huge fan of Fridge Cake & particularly love this recipe as it contains meringue, as well as the usual nuts & dried fruit. If, like me you prefer a rustic finish to the cake, don't chop your nuts or crumble your Digestive biscuits too small.
What I love about making this cake is that it's kind of baking without baking, if you get what I mean! You just need to allow time for the cake to set in the fridge.
