Butternut Squash + Sweet Potato Lasagne

If there are any vegetarians reading have to try this recipe!
Butternut Squash is one of my favourite vegetables. I adore it roasted, but have never cooked a lasagne with it before. 
As it's in season & at its best, I couldn't wait to combine it with all the flavours that go into this delicious dish...think sage, rosemary, nutmeg, ginger.

If you're worried about the cheese levels (the sauce is made with ricotta & parmesan), use the low fat equivalents which are readily available in most supermarkets.
A great alternative to a classic lasagne.

served with baby leaves sundried tomatoes & stuffed olives, drizzled with a balsamic glaze

Just want to say a massive thank you for all your birthday wishes over the last couple of days - they really made me feel warm & fuzzy inside. I'm so lucky to have such lovely followers!
