If there are any vegetarians reading today...you have to try this recipe!
Butternut Squash is one of my favourite vegetables. I adore it roasted, but have never cooked a lasagne with it before.
As it's in season & at its best, I couldn't wait to combine it with all the flavours that go into this delicious dish...think sage, rosemary, nutmeg, ginger.
If you're worried about the cheese levels (the sauce is made with ricotta & parmesan), use the low fat equivalents which are readily available in most supermarkets.
A great alternative to a classic lasagne.

Whattt??? I have never really heard of lasagne WITHOUT meat but this actually makes my mouth water! Butternut squash has to be the ultimate winter veg right!
