If ever I'm in a restaurant & scallops are on the menu, I have to indulge - they're are one of my favourites!
Today's recipe combines scallops with pancetta, which as a duo work together beautifully.
The lentils are flavoured by garlic & sage, with the watercress dressed with lemon juice.
Whenever I make this at home it's normally on the BBQ, but over Easter I decided to adapt the recipe & grill them instead for a quick, easy meal - just as yummy!
