As the sunshine continues this week, I've been making lots of different salads for lunch & couldn't wait to post this one for you which I ate for lunch just yesterday - it's one of my favourites.
I love it when dishes aren't too fussy, containing just a few simple, healthy ingredients that let the flavours speak for themselves.
Today's dish is the perfect example of this...
