Soy Baked Salmon With Zingy Salsa

Happy Wednesday Lovelies!

Today's recipe has been one of my favourite evening meals to serve during the hot weather, when you don't want to eat anything too heavy. Marinating the salmon delivers loads of flavour, as well as tenderising it & the zingy salsa is so refreshing - I like to serve it slightly warm.
The dish also works well served with an asian salad or noodles.

Funny you should say this Adele, I happened to have salmon baps for lunch today and they were just incredible, it looked like this salmon too, I'd love to try salmon soy baked, so delicious!
