Happy Wednesday Lovelies!
Rustling up something for lunch at the weekend couldn't be any easier than topping a ready rolled sheet of puff pastry with your favourite ingredients & wacking it in the oven.
Served with a side salad, this is a great dish for vegetarians. I have various topping combo's I tend to use, which I'll list at the bottom of the post.
You will need...
1 x ready rolled sheet of puff pastry (I use jus-roll)
1 x large red onion
Knob of butter
Splash of Balsamic Vinegar
150g spreadable goats cheese
Large handful baby tomatoes
Here's how I made it...
Preheat your oven to 220C. Slice your onion
Caramelise your red onion using the knob of butter & balsamic vinegar - don't do what I did & forget about your onions so they catch!!! Don't worry I picked out the really black bits!
unravel your pastry roll & spread your goats cheese over it, leaving a border around the edge
add your caramelised red onion
chop your tomatoes (I like to use a mixture of red & yellow to give more colour)
add your tomatoes & some torn basil leaves
bake in the oven for 15-20 mins
serve with a side salad & enjoy
