Peach, Goats Cheese & Parma Ham Salad

Happy Wednesday Lovelies!

Lunch time often means a healthy salad for me, so I was keen to try this recipe of Peony's which combined so many ingredients I love - goats cheese, rocket, basil, parma ham (you know how I adore Italian food!). 
This salad would also make a great starter served with some rustic bread if you're entertaining - I love how pretty it looks on the serving board.
The flavour combination is so well balanced, it will now be a regular dish chez moi & I would highly recommend you give it a try!


I used nectarines in lieu of peaches which I prefer

score the skin & place in boiling water - leave for a good couple of minutes

peel the skin off the peaches & cut into segments

griddle the peach segments, you can brush with oil, although I didn't bother!

layer up your salad - start with the rocket, then the peach segments

add the parma ham, basil & goats cheese

snip the chives over the salad & season

drizzle with olive oil & balsamic & serve

et voila

I never thought to use peaches inside my salad! I always mix it with apricots! good to know, another way to eat salad!
