Easy Chocolate Pud

Happy Wednesday Lovelies!

I've been making today's Easy Chocolate Pud since my best friend at Uni gave me the recipe when we house shared - it's an oldie but goodie. I still refer back to the recipe which is written on a scrappy piece of paper that's seen better days!

It's a really basic sponge pud with chocolate sauce - super easy to make & tastes absolutely delicious. I love how the chocolate sauce sinks from the top to the bottom of the pudding during cooking.

I always make some extra chocolate sauce on the side - yes, I'm that annoying person in a restaurant that always asks for extra chocolate sauce!!!!

Ingredients:
Sponge...
113g butter/marg
113g granulated sugar
85g self raising flour
2 tablespoons cocoa 
pinch salt
2 large eggs
milk to mix if necessary 

Chocolate Sauce:
113g soft brown sugar
2 tablespoons cocoa
1/2 pint boiling water


cream together the sugar, butter & eggs


sift in your flour & cocoa powder


fold the flour & cocoa powder into the mixture


pour mixture into a well greased bowl

To make the chocolate sauce:


mix together with boiling water & pour over the sponge mixture


it should look something like this...I always put a lid on the pudding & remove half way through cooking so that the chocolate sauce doesn't dry out too much


test to see if your sponge is ready by placing a sharp knife in the centre of the sponge - if it comes out clean then it's ready


the sponge is now on the top & the chocolate sauce is underneath

To make the additional chocolate sauce:
100g good quality dark chocolate (min 70% cocoa solids)
30g caster sugar
1 level tablespoon cocoa powder
150 ml water


heat the water, sugar & cocoa powder in a small pan & bring to the boil. Stir in the broken chocolate pieces until fully melted.


the pudding works well with cream or ice cream on the side
