Happy Wednesday Lovelies!

I've not done a great deal of baking over the summer. Between a broken oven switch putting my main oven out of action for a couple of months, buying more properties, dog training with Eric etc, life has been extremely hectic, hence the absence of food posts.

On Friday it was Ian's Birthday. I couldn't let the occasion pass without baking a special birthday cake to celebrate. I've seen the Malteser cake many times on Pinterest - it's a bit of a show stopping centre piece for any party table.
I love cakes that look impressive yet are incredibly easy to make & the Malteser cake definitely falls into this category you'll be pleased to hear!




To make the sponge it's literally a "bung it all in a bowl & blitz it" method - couldn't be simpler. 


You're meant to divide the mixture between two sandwich tins, but I made one cake using my favourite cake tin (yes I even have favourites when it comes to cake tins!) then cut it into two halves.



Once the cake had cooled & I'd removed it from the tin it was time to make the Buttercream.


Again, quick & simple. Once mixed, you pour melted dark chocolate into it. Of course the best bit is licking the bowl afterwards - chefs perks!

The butter cream goes both in between the 2 halves of cake & all over the outside.
I did find it slightly on the runny side following the recipe & although I added more icing sugar to stiffen it up I would suggest putting in he fridge for half an hour for the butter cream to set a little, it's easier for the Maltesers to stick to the icing. 


Then comes the best bit....decorating with your Maltesers...you need lots of them too!



Once the top is complete, decorate the sides.



Et voila!


This really is chocolate heaven. As an alternative, instead of adding melted chocolate to the butter cream you could leave it plain, then decorate with white chocolate Maltesers. I think a white version would be great to serve around Christmas time.
